 St. Barts – As the first Relais & Château property in the Caribbean to receive a Grand Chef distinction, Hotel Le Toiny is known for its exceptional cuisine and famed Restaurant Le Gaiac. Continuing its commitment to culinary excellence, the hotel will launch a major restaurant refurbishment project this July, reopening the refreshed space in the fall for guests to enjoy Michelin-starred Chef Stéphane Mazières’ Creole-accented gourmet French fare, Chef Pâtissier Marie HUE. The million-dollar renovation is the first for Restaurant Le Gaiac since its 1992 opening. The project will update all interior and exterior spaces, including the restaurant’s scenic infinity pool. Floors will be redone in natural beige limestone reminiscent of the sand on Le Toiny’s private beach, while the pool will be lined in anthracite lava stone and reflect the colors of a river bed.

Chef Sylvain Révélant is a culinary artist who is known for his accomplished cuisine which is a masterful blend of French and Creole culinary influences.

Le Gaïac’s menu, designed by Executive Chef Sylvain Révélant, puts an inventive spin on traditional French dishes of St. Barts. Menus cater to any need, from light meals to comprehensive gastronomic experiences.
Each dish can be masterfully paired with one of the 250 carefully selected wines featured on Le Gaïac’s wine list. Private dining can be arranged upon request.
